Blistered Tomatoes
Like many vegetables, the flavor of tomatoes transforms when they are roasted. Roasted tomatoes are a burst of intense, concentrated flavor. Enjoy them as a side dish or mix into pasta dishes for bites of juicy sweetness!
Serves 2-4
Preheat the oven to 450°F. Toss 2 pints grape tomatoes with 1 Tb olive oil, ¼ tsp oregano, ¼ tsp thyme, salt and pepper. Place tomatoes on a lined sheet pan and roast for 20 minutes until they are blistered and some have burst.
