Tomato and Herb Salad
Juicy tomatoes taste like the beginning of summer, especially when you add fresh herbs. Herbs are rich in vitamins, minerals and polyphenols, which have antioxidant and anti-inflammatory properties. Preparing meals with herbs may also have indirect health benefits. For heart-healthy meals, reduce the use of salt by seasoning generously with herbs.
Serves 2
In a large bowl, add 2 cups chopped cherry or grape tomatoes and ¼ cup mixed fresh herbs (such as dill, parsley, cilantro). In a small bowl, whisk together 1 tsp red wine vinegar, juice of ½ lemon, 2 Tb olive oil and ¼ tsp dried oregano. Drizzle over the tomato salad and toss well. Season with salt and pepper to taste. Serve immediately.
Pro tip: add any other chopped raw vegetables such as cucumber or bell pepper. Beans, chopped olives and/or cheese would also taste delicious in this simple salad.
