Roasted Bell Peppers

Roasted bell peppers are a versatile ingredient that can be enjoyed by themselves or used in sauces, sheet pan meals or condiments. Roasted red peppers have a deep flavor that’s sweet and smoky. All bell pepper colors - red, yellow, orange and green - are delicious when roasted.

Serves 4

Preheat the oven to 450°F. Slice open 4 bell peppers, remove the stems and seeds and slice into quarters or strips. Toss with 2 Tb olive oil, ½ tsp dried oregano, salt and pepper. Roast for about 20 minutes or until tender. Before serving, toss with a splash of balsamic vinegar. Serve with fresh basil leaves.

Pro tip: add roasted peppers to a hummus sandwich.
