Kale Currant Salad
Food trends come and go, but kale salad is one we love because of the health benefits of leafy greens. The trick to a tasty kale salad is massaging the kale by hand to soften the leaves. To make this an entrée salad, add salmon, sliced chicken or chickpeas.
Serves 2
Shred 1 large bunch curly kale and place in a large bowl. To make the dressing, mix 2 Tb olive oil, the juice of 1 lemon, ½ tsp Dijon mustard, ¼ tsp honey and 1 clove crushed garlic. Massage the dressing into the kale. Add ¼ cup currants and toss well. Season with salt and pepper to taste.
Pro tip: sprinkle with pine nuts and parmesan.
