Quick Pickled Red Onions
Quick pickling is an easy method of transforming the taste of alliums like onions or other veggies. Enjoy quick pickled red onions on salads and sandwiches or as a garnish.
Yields 2 cups
Pack 1 thinly sliced red onion into a clean, heatproof glass jar. In a small pot over medium heat, add ¾ cup apple cider vinegar, ¾ cup water, ½ tsp salt and 2 tsp whole black peppercorns. Cover the pot and bring the ingredients to a boil. Remove the pot from heat, take out the peppercorns with a slotted spoon and pour the liquid over the onion slices. Allow the onions and liquid to cool. Store in the refrigerator.
Pro tip: If you prefer less tangy onions, add a pinch of sugar or another sweetener before heating up the pickling liquid.
