Persillade Sauce
In this recipe from Great Performances chefs, shallots are mixed with parsley, garlic, vinegar, oil and salt. Persillade is a simple French sauce that can be used on a variety of dishes such as simple roasted veggies, tofu or fish.
Serves 16
In a medium bowl, mix 2 packed cups finely chopped parsley, 1 Tb finely minced shallot, 1 clove grated garlic, 3 tsp white wine vinegar, 1 Tb olive oil and salt to taste.
