Citrus and Red Onion Salad
Brighten up your plate with juicy citrus and tangy red onions. Swap navel oranges with blood oranges, pink grapefruit or a variety of seasonal fruit.
Serves 6
In a large bowl, toss 2 Tb white balsamic vinegar and ¼ cup thinly sliced red onion. Peel and slice 4 navel oranges into round slices. Add orange slices, 2 Tb olive oil and 2 Tb roughly chopped cilantro to the bowl. Toss to coat. Season with salt to taste.
