How to Make Garlic-Infused Olive Oil
Allium vegetables including garlic, onions and scallions are unmatched in the way that they enhance the flavor of dishes. Garlic, in particular, has a pungent and spicy flavor. Although garlic mellows throughout the cooking process, sometimes a garlicky dish leaves you reaching for mouthwash. Also, some people find that garlic triggers excess gas. One way to add garlic flavor and aroma to a milder dish is to cook with garlic-infused olive oil. While you can easily buy this product in the store, we love to make our own.
Heat 1/2 cup olive oil in a small pot over medium-low heat and add 2 whole garlic cloves (or use crushed garlic cloves for more flavor). Allow the garlic to cook for a few minutes until it becomes fragrant. Remove the pot from heat and allow the oil to cool. Remove the garlic cloves with a slotted spoon. Store the infused oil in a glass container in the refrigerator and use the oil within 4 days.
Please note that food safety organizations advise against storing garlic-infused olive oil at room temperature due to the risk of bacterial growth. Refrigerate the oil and consume it within 3-4 days. Organizations also advise that it is possible to freeze garlic-infused olive oil and bring it to room temperature just before using it.
