Chimichurri

Chimichurri 

Originating from Argentina and Uruguay, chimichurri is typically made with parsley, garlic, onion, chile pepper, oregano, vinegar, oil, salt and pepper. Variations may include other soft herbs, citrus juice and red pepper flakes. Chimichurri can be made by hand, but this version relies on a food processor. Chimichurri is most often served with grilled meats, but its tangy flavor pairs well with other proteins like fish, beans and tofu as well as vegetables. 

Serves 8+

Roughly chop 1 small shallot, 2 garlic cloves and 4 Fresno chile peppers (seeds can be removed or not). Add to a food processor and pulse a few times. Add 2 bunches roughly chopped flat parsley and 2 Tb fresh oregano leaves. Pulse a few more times. Remove chimichurri from the food processor and stir in ¼ cup red wine vinegar and ¼ cup olive oil. Adjust ingredient quantities to suit your preferences. Season with salt to taste.
