Green Goddess Dressing

Tangy green goddess dressing tastes delicious on just about any vegetable, whole grain or protein. In a salad, a sturdy green such as romaine or kale holds up better to a creamy dressing than a delicate lettuce. 

Serves 8

Blend 6 anchovies, juice of 2 lemons, 1 garlic clove, 2 Tb olive oil, 1 cup nonfat plain Greek yogurt, ¼ cup avocado mayonnaise, ½ cup chopped fresh dill, 1 cup chopped fresh parsley, 2 cups chopped cilantro and 1 cup chopped basil. Adjust herb quantities and season with pepper to taste.

Pro tip: anchovies add umami as well as salt. A combination of Dijon mustard and vegan Worcestershire sauce may be a vegan substitute for anchovies.
