Miso Ginger Dressing
Miso is a Japanese fermented soybean paste. Because it is made with salt, a little miso goes a long way to add salty, umami flavor to a dish. This miso ginger dressing isn’t just for salad. Drizzle it on simple roasted vegetables (omit the salt), try it on brown rice noodles or crispy baked tofu, or use it as a marinade for proteins.
Serves 6
In a bowl, combine 2 Tb white miso, ⅓ cup rice wine vinegar, ⅓ cup sesame oil (not toasted sesame oil), a 2-inch piece of grated ginger, the zest and juice of 1 lemon and 1 tsp maple syrup. Whisk until smooth.
