Miso Lime Chickpeas

Strong ingredients like miso and lime add a lot of flavor to a plant protein such as chickpeas. Chickpeas are a great side dish or they can be added to salads or grain bowls. Additional ingredients such as cauliflower, chopped cilantro, red pepper, cucumber or red cabbage would also pair well.

Serves 4

In a small bowl, whisk 2 Tb sesame oil, 1 Tb white miso paste, juice of 1 lime, 1 tsp maple syrup and 1 tsp red pepper flakes (plus more to taste). Add a splash of water if the miso paste clumps together. Drain and rinse 2 cans chickpeas. Toss the chickpeas in the miso lime sauce. Spread out on a lined sheet pan. Roast in the oven for 20 minutes. Serve warm or at room temperature.

Pro tip: pair Miso Lime Chickpeas with Turmeric Cauliflower, Cauliflower Rice with Bok Choy and Lime or Sesame Swiss Chard.
