Avocado Egg Salad
Pair eggs with heart-healthy unsaturated fats like avocado. Our take on egg salad swaps out mayonnaise for creamy avocado. Serve immediately to prevent avocado browning.
Serves 2
Remove the pit from 1 avocado. Peel the avocado and slice into cubes. Add avocado to a bowl with 4 chopped, hard-boiled eggs, 2 tsp Dijon mustard, ½ tsp paprika, 2 Tb finely chopped parsley and 2 Tb finely chopped scallions. Mash together ingredients with a fork. Season with salt to taste. Serve immediately with brown rice cakes or whole wheat toast.
