Avocado Toast with Sauerkraut
Both fermented foods and avocado have topped the hottest food trends lists for many years, and they aren’t going away anytime soon. Adding tangy sauerkraut to creamy avocado on whole wheat toast is a delight for our taste buds and our gut. This simple recipe is nutritious because of the probiotics, heart-healthy fats and whole grains. It’s also a convenient dish that’s easy to put together if you keep these ingredients stocked in your fridge and pantry.
Serves 1
Toast 1 slice of whole wheat bread. Using a fork, mash ¼-½ avocado (depending on the size of the avocado) evenly over the bread. Top with 2 Tb sauerkraut (any kind) and 1 tsp hemp seeds. Season with a sprinkle of sesame seeds and ground black pepper to taste. Optional add-ons include sprouts, lemon juice and tahini.
Pro tip: Try different types of sauerkraut for new flavors. Dill, carrots, beets and turmeric are all delicious additions to sauerkraut for flavor and color. You can even try a mix of sauerkraut, as shown in the photo.
