Fluffy Scrambled Eggs with Chives
Eggs are an easy dish that’s nourishing and satisfying. Eggs are often considered a breakfast food but they can work for any meal, especially when paired with avocado toast, Sautéed Garlic Spinach, Melon Mint Salad or other side dishes. For most people who enjoy eggs, eating <6-7 whole eggs per week prepared in healthful ways is reasonable.
Serves 1
Crack 2 whole eggs into a small bowl. Whisk with a pinch of salt and pepper. Heat a nonstick skillet over medium heat. Add 2 tsp olive oil and swirl to coat the pan. Lower heat to medium-low and pour the beaten eggs into the skillet. As the eggs cook, lift and fold them with a spatula until they are fluffy. Sprinkle 1 tsp chopped chives over top and season with pepper to taste. Serve eggs hot with whole grain toast and fruit.
