Potato Salad with Sauerkraut
Potato salad comes in all different forms. This vegetarian version inspired by a traditional German-style potato salad has chopped sauerkraut, amping up the tangy flavor and adding probiotics to the dish.
Serves 4
Bring a large pot of water to a boil. Chop 1 lb. medium red potatoes and add to boiling water. Cook for 15 minutes. Drain and let cool. In a large bowl, toss potatoes with ½ cup chopped sauerkraut, 1 tsp Dijon mustard, ¼ cup chopped chives and a splash of apple cider vinegar. Drizzle in olive oil and season with salt and pepper to taste.
