Cauliflower Rice with Bok Choy and Lime
Are you jumping on the cauliflower rice trend? It’s a convenient way to enjoy this nutrient-packed cruciferous veggie. Add edamame salad and sweet potato wedges for a balanced meal.
Serves 2-3
In a large pan over medium heat, add 1 Tb olive oil, 1 head chopped baby bok choy, 1 tsp grated fresh ginger and ¼ cup chopped scallions. Cook until the bok choy starts to soften. Add 10 ounces cauliflower rice (can be fresh or defrosted from frozen). Cover and cook until soft. Remove from heat and stir in ¼ cup chopped cilantro leaves and the juice from 1 lime. Season with salt and pepper to taste.
