Pumpkin Pie Smoothie

Pumpkin Pie Smoothie

Is there a can of leftover pumpkin purée hiding in your pantry from last Thanksgiving? Enjoy pumpkin in a new way by making a creamy smoothie that tastes like fall. To control the amount of added sugar in the recipe, adjust the following ingredients as needed. Make sure to use pumpkin purée, not pumpkin pie filling or mix. Look for a lower sugar Greek yogurt that has under 10 grams of sugar per serving. Use an unsweetened vanilla almond milk or another unsweetened milk.

Serves 2

Blend 1 frozen banana, ¾ cup pumpkin purée, ½ cup vanilla Greek yogurt, ⅓ cup non-dairy milk (can substitute dairy milk), 1 Tb maple syrup, 1 tsp vanilla extract, ½ tsp pumpkin spice (can substitute ground cinnamon), 2 servings protein powder (optional) and 1 cup ice cubes until smooth. Use less ice if you prefer a thicker smoothie.
