Balsamic Tempeh

Soy foods are misunderstood, but research shows they provide health benefits, especially when they are consumed in place of animal protein. Tempeh is a soy product that is typically fermented with whole grains. Prepare balsamic tempeh to add to grain bowls or serve with broccoli, carrots and/or cauliflower.

Serves 2

Cut 8 oz tempeh into bite-sized chunks. Add to a bowl with ½ cup balsamic vinegar, 2 Tb maple syrup, 2 Tb low-sodium tamari (or soy sauce) and 2 Tb olive oil. Marinate in the fridge for a few hours. Preheat the oven to 350°F. Using a slotted spoon, scoop tempeh out of the marinade and spread on a lined sheet pan. Cover with foil and cook for 20 minutes. 

Pro tip: use the leftover marinade as a sauce or salad dressing by whisking in some additional oil.
