Super Seedy Oatmeal
By themselves, oats are a nutritious whole grain with complex carbohydrates, fiber, vitamins and minerals. Oats are also a great vehicle to enjoy other nutrient-dense ingredients such as seeds. Seeds add some flavor and more nutrition, especially heart-healthy fats and protein. If preparing oats on the stovetop seems like too much work in the morning, pop the milk and oats in the microwave on high for 3 minutes. Use a large bowl to make sure the milk doesn’t overflow.
Serves 2
Bring 1-¾ cups milk (dairy or non-dairy) and a pinch of salt (optional) to a boil in a small saucepot. Lower to medium heat and stir in 1 cup rolled oats, ½ tsp cocoa powder and ¼ tsp ground cinnamon, stirring every couple of minutes until the oats are creamy. Stir in 1 Tb hemp seeds, 2 tsp ground flax seeds and 1/2 tsp chia seeds. Top with a drizzle of tahini, scoop of yogurt and chopped fruit (optional). Enjoy immediately.
Pro tip: store seeds in the fridge, which extends their shelf life due to their fat content.
