Flax Seed Crackers
Flax seeds are a great source of fiber, protein and heart-healthy fats. Increase the number of ways you can use flax seeds by transforming ground flax seeds into crackers. Dip flax seed crackers into hummus, crumble over a salad, smear with avocado egg salad or enjoy plain. If you have leftover ground flax seeds, add a scoop to oatmeal, yogurt and smoothies.
Makes 24 crackers
Preheat the oven to 400°F. In a large bowl, combine 1 cup water, 2 cups ground flax seeds, 1 tsp chili powder, 1 tsp dried oregano, 1 tsp garlic powder, 1 tsp black pepper and ¼ tsp salt. Mix until a dough forms. Spread dough evenly on a lined baking sheet. Score the dough into crackers. Bake for 30 minutes or more until the edges of the crackers are browned and appear crisp.
Pro tip: store ground and whole flax seeds in the fridge to extend freshness.
