Cinnamon Roasted Pumpkin Seeds

Serves 6
Preheat the oven to 350°F. Add 2 cups raw pepitas to a bowl and toss with 2 tsp melted coconut oil, 1 tsp ground cinnamon and a pinch of salt. Spread seeds on a lined sheet pan and roast for 15 minutes, shaking halfway. Enjoy warm or cool completely and store in an airtight container for up to two weeks.
