BBQ Pepitas
Seeds and nuts make a great snack: they contain fiber, healthy fats and antioxidants. I love spicing up pepitas—or pumpkin seeds—with a bit of smoked paprika for a toasty, bbq flavor.
Serves 6
Preheat the oven to 350°F. Combine 2 cups raw pepitas, 2 tsp olive oil, 1 tsp salt, 1 tsp smoked paprika in a bowl. Spread on a lined sheet pan and roast for 15 minutes, shaking halfway. Enjoy warm or cool completely and store in an airtight container for up to two weeks.
