Lemon Roasted Cauliflower 

Roasted veggies like cauliflower and Simple Roasted Brussels Sprouts are an easy side dish to any meal. Cruciferous veggies like cauliflower contain powerful health properties due to their vitamins, minerals, fiber, and phytochemicals. 

Serves 4

Preheat the oven to 400°F. Chop 1 head of cauliflower into florets. In a large bowl, mix cauliflower florets with 1 Tb olive oil, the juice of 1 lemon, ¼ tsp salt and freshly ground black pepper. Spread out cauliflower on a sheet pan lined with parchment paper. Roast for 45 minutes, shaking the pan every 15 minutes. Before serving, top with 2 tsp lemon zest. The cauliflower should appear browned and feel tender when pierced with a fork.
