Simple Roasted Broccoli
All vegetables are nutritious, but cruciferous vegetables in particular have been studied for their powerful health properties. Cruciferous vegetables include broccoli, Brussels sprouts, cabbage, cauliflower, arugula, bok choy, collard greens, kale, kohlrabi and radishes. For the heartier cruciferous vegetables such as broccoli, Brussels sprouts and cauliflower, using a simple preparation method such as roasting with olive oil and spices gets a nutritious side dish on your table with little effort.

Preheat the oven to 400°F. Chop 2 heads of broccoli into florets. In a large bowl, mix broccoli florets with 2 Tb olive oil, the juice of 1 lemon, ¼ tsp salt, freshly ground black pepper and 1 tsp spice blend (optional). Spread out broccoli on a sheet pan lined with parchment paper. Roast for 20-25 minutes, shaking the pan halfway. The broccoli should appear slightly browned and feel tender when pierced with a fork.
Pro tip: use frozen broccoli if you don’t have time to wash and chop heads of broccoli.
