Maple Mustard Brussels Sprouts & Cauliflower
Maple syrup and mustard are a classic sweet and savory pairing. A little goes a long way to add flavor to Brussels sprouts and cauliflower. Make the same recipe with any combination of health-promoting cruciferous vegetables such as broccoli and cabbage.
Serves 6
Preheat the oven to 400°F. Trim the ends of 1 lb of Brussels sprouts and cut each sprout in half. Cut 1 head cauliflower into bite-sized florets. In a large bowl, mix Brussels sprouts and cauliflower with 2 Tb olive oil, 1 Tb maple syrup, 2 Tb Dijon mustard and 1/2 tsp freshly ground black pepper. Spread out the vegetables on a sheet pan lined with parchment paper. Roast for 45 minutes, shaking the pan every 15 minutes.
