Roasted Pattypan Squash

Pattypan squash is a type of yellow and green summer squash shaped like a flying saucer. The flesh, skin and seeds are edible. Because it has a firmer texture than zucchini or yellow summer squash, prepare pattypan squash in the oven for an easy side dish.

Serves 6

Preheat the oven to 400°F. Cut 6 pattypan squash into bite-sized chunks. Add to a lined sheet pan with 1 thinly sliced small red onion. Add 2 Tb olive oil, ¼ tsp dried thyme, ¼ tsp dried oregano and salt and pepper. Toss to combine. Bake for 30 minutes or until the squash is tender.
