Greek Vinaigrette
Greek vinaigrette tastes delicious drizzled over a chopped salad with romaine, tomatoes, cucumbers, kalamata olives, feta cheese and red onion. For a simple side dish, try a Butter Lettuce Salad with fresh herbs and Greek vinaigrette.
Serves 4
In a Mason jar, add ¼ cup olive oil, 1 Tb red wine vinegar, the juice of 1 lemon, 1 minced or pressed garlic clove and ½ tsp dried oregano. Shake to combine. Season with salt and pepper to taste.
Pro tip: make vinaigrettes in large batches for salads, grain bowls and marinades.
