Chickpea Lettuce Wraps
While we love whole grain tortilla wraps, lettuce wraps can also be a refreshing, crunchy bite. Chickpea lettuce wraps are an easy weekday lunch idea. If prepping the ingredients in advance, wait to assemble the wraps until just before eating. This recipe uses a shawarma spice blend, inspired by the Middle Eastern meat dish. You can also make your own spice blend.
Serves 4
Preheat the oven to 350°F. Drain and rinse 2 cans chickpeas and add to a large bowl. Toss with 1 Tb shawarma spice blend (may include cumin, coriander, paprika, turmeric, garlic) and 2 Tb olive oil. Spread out chickpeas on a lined sheet pan and roast for 20 minutes or until crispy. Allow chickpeas to cool and lightly mash them with a fork. Assemble 8+ large Boston lettuce leaves and add sliced vegetables (tomato, cucumber, avocado) to each. Divide chickpeas and add them to lettuce leaves. Drizzle each with 1 tsp tahini. Fold in the sides of each lettuce leaf and eat as a wrap.
Pro tip: serve with crackers and dip such as beet tzatziki or garlic hummus.
