Butter Lettuce Salad
Butter or butterhead lettuce has tender leaves and refreshing, crunchy ribs. These soft greens pair well with fresh herbs and only require a light salad dressing. Toss with dressing immediately before serving. Pair with Baked Cod and Summer Squash for a simple summer meal.
Serves 2
In a small bowl, whisk together 1 Tb finely chopped shallot, the juice of 1/2 lemon, 1 Tb white balsamic vinegar and 2 Tb olive oil. Drizzle dressing onto 5 oz roughly chopped butter lettuce (or keep the leaves whole if they are small) and gently toss. Garnish with 1 Tb chopped fresh parsley and 1 Tb chopped fresh dill. Season with salt and pepper to taste.
