It is common now to see sensational headlines about carbohydrates, likening some fruit and vegetables to candy. While it is true that vegetables contain carbohydrates, and some contain more than others, that does not negate the variety of health benefits that vegetables provide. 

Consider that vegetables exist on a spectrum, from less starchy to more starchy. On the less starchy side we have lettuces, asparagus, broccoli, tomatoes, cucumbers, cauliflower and more. On the more starchy side, there are carrots, parsnips, squash, potatoes, sweet potatoes, peas and corn.

To achieve a balanced way of eating, choose a variety of vegetables often. Vegetables have a diverse range of nutrients, flavors, textures and colors. To keep meals and snacks delicious and health-forward, aim to eat all kinds of vegetables.
