Chile Lime Dressing
Simple homemade dressings can make all the difference when it comes to adding flavor to vegetables. Dressings are typically paired with salads, but they can also be brushed onto grilled or roasted veggies. A dried guajillo chile pepper adds mild heat to this tangy dressing.
Serves 4
Remove the stem and seeds from 1 dried guajillo chile pepper (include the seeds for more heat). Soak in boiling water for 20 minutes until soft. Blend the chile pepper, zest and juice of 1 lime, 2 tablespoons apple cider vinegar, ¼ cup olive oil, 1 chopped garlic clove and a splash of agave syrup. Season with salt to taste.
