In New York, the first winter squash are harvested in August, but it’s not really until October when cool weather hits that it feels like squash season. Winter squash tastes delicious with warming spices like curry powder, cumin and cinnamon, making it the perfect side dish to a seasonal meal. 

Winter squash are not only delicious, but they also provide health benefits. Winter squash are rich in vitamin A, in the form of the phytochemical beta-carotene. They contain vitamin C, B vitamins and several minerals including potassium and magnesium. Winter squash are also sources of fiber, especially when consumed with the skin. The skins of delicata, acorn, kabocha and honeynut squash are tender when cooked.

Besides their nutrient profiles, winter squash provide other benefits such as diversity of flavor, texture and color. Common varieties include butternut, honeynut, acorn, kabocha, pumpkin, acorn, buttercup, spaghetti and delicata. As a family of vegetables, winter squash are versatile, pairing well with spices, herbs and other ingredients.
