Serves 4
Heat the oven to 400°F. In a small bowl, mix 2 tsp ground cumin, 2 tsp chili powder, 1 tsp cayenne and ½ tsp salt. On a large lined sheet pan, place 1 sliced red bell pepper, 1 sliced yellow bell pepper, 1 sliced green bell pepper and 1 sliced yellow onion. Drizzle vegetables with 1 Tb olive oil and season with half of the spice blend and freshly ground black pepper. Cook for 20 minutes. Remove from the oven and make room on the same sheet pan for 4 salmon fillets (about 4 ounces each). Squeeze the juice of 1 lime over the fillets and season with the remaining spice blend. Cook the salmon and vegetables for an additional 10-12 minutes until the salmon reaches desired doneness. This sheet pan meal pairs well with brown rice and cilantro or spicy black beans.
