Kalamata Olive Hummus
Have you ever wondered what gives hummus its nutty, creamy “hummus” taste? Seeds! Try making hummus without tahini, a paste made of sesame seeds, and you’ll see what we mean. Blended chickpeas with spices are still delicious, but they lack the hummus flavor we know and love.
Serves 4
Drain 1 14-ounce can chickpeas, reserving the liquid. In a food processor, blend chickpeas, 2 Tb tahini, the zest and juice of 1 lemon, 2 minced garlic cloves, 1 tsp ground cumin and 1 tsp chili powder. Pulse until smooth, adding the chickpea liquid if needed. Add 1 cup pitted kalamata olives and pulse until chopped. Serve with an additional dash of chili powder and ¼ cup chopped and pitted kalamata olives. Serve with whole wheat pita and vegetable crudité.
