Roasted Chickpeas 5 Ways

Chickpeas and garbanzo beans - two names for the same delicious legume. When canned chickpeas are drained, rinsed and roasted in the oven with olive oil and spices, they become delicious and crunchy. Also, they provide protein and fiber. Serve roasted chickpeas as a snack or on top of salads and grain bowls using these 5 different spice combinations.

Roasted Chickpeas

Serves 6

Preheat the oven to 425°F. Drain and rinse 2 cans 15-oz. chickpeas. Spread out a lined sheet pan. Toss with 2 Tb olive oil, ¼ tsp salt and spices (see below for ideas). Roast for 20-25 minutes or until crispy. 

  • 2 tsp smoked paprika + 1 tsp garlic powder

  • 2 tsp turmeric + 1 tsp ground ginger + black pepper

  • 1 tsp paprika + 1 tsp cumin

  • 1 tsp chili powder + ½ tsp cayenne

  • Red pepper flakes to taste

Pro tip: to help keep the chickpeas crispy, store them in a glass jar at room temperature for a couple of days.
