Tamari Roasted Almonds

Nuts are a nutritious and easy snack. Almonds (or other nuts) pair well with tamari, a fermented soybean sauce similar to soy sauce but without wheat. Look for low-sodium tamari, which adds the same umami flavor but with less sodium. Watch nuts carefully as they roast, as they tend to burn quickly in the oven.

Serves 8

Preheat the oven to 300°F. Spread out 2 cups raw, unsalted almonds on a lined sheet pan. Roast for 20 minutes, shaking every few minutes to make sure they do not burn. Remove from the oven and add to a bowl. Drizzle in 2 Tb low-sodium tamari. Allow the oven to cool. Return the almonds to the sheet pan and place in the oven for 10 minutes to dry. Remove and enjoy.

Pro tip: in a nut-free home, swap almonds for roasted pepitas (pumpkin seeds).
