Cheezy Beans
These beans are “cheezy” because nutritional yeast has a rich, savory flavor akin to cheese. Nutritional yeast, a vegan product, is known for being fortified with vitamin B12 and has very little sodium. Pair warm beans with a Simple Mixed Green Salad or Butter Lettuce Salad.
Serves 4
In a large pan, heat 2 Tb olive oil over medium heat. Add 4 minced garlic cloves and cook until fragrant. Drain and rinse 2 cans cannellini beans. Add beans, 1 cup sliced grape tomatoes and ½ cup water to the pan and stir. Season with ¼ cup nutritional yeast, ½ tsp dried oregano, salt and pepper. Cook for about 15 minutes, stirring a few times throughout. Stir in ¼ cup chopped fresh parsley. Serve with extra nutritional yeast for sprinkling over the beans.
Pro tip: nutritional yeast provides 8 grams of protein per 2 tablespoons.
