Grapefruit Chia Seed Pudding

Fresh citrus can bring bright flavors to cold-weather breakfasts and snacks such as chia seed pudding, a nutrition powerhouse that contains omega-3 fatty acids, protein, fiber, vitamins, minerals and antioxidants. Check out more chia pudding ideas - the flavor pairings are endless!

Serves 1

In a Mason jar, add ½ cup unsweetened milk (dairy or non-dairy), ½ cup plain nonfat Greek yogurt (dairy or non-dairy), ½ Tb maple syrup, 1 teaspoon grapefruit zest and 2 Tb chia seeds. Close the jar and shake until well combined. After 30 minutes, shake again to ensure that the chia seeds are not sticking to the bottom of the jar. Refrigerate the chia pudding overnight. Supreme 1 grapefruit and reserve ¾ of the slices for another recipe. Top the chia pudding with the remaining slices and 2 Tb pumpkin seeds.
