If you’re looking for ways to pack a variety of nutrients into breakfast, try sweet potato toast. Slicing sweet potatoes lengthwise and using them as toast isn’t a knock against whole grains (which we love), but it’s nice to shake it up with a seasonal alternative. Leave the skin of the sweet potatoes on for more fiber.

Start by preparing the sweet potatoes. Preheat the oven to 425°F. Remove the ends of the sweet potato and slice lengthwise into ½-inch slices. Arrange on a lined baking sheet. Bake for 20 minutes. You can also prepare the slices in a toaster. Once cooked, top the sweet potato toasts with various toppings.
