Italian White Bean Dip
Chickpea hummus isn't the only dip in town. Serve white bean dip with veggie sticks or whole grain crackers for a summer BBQ.
Serves 4
Drain and rinse 1 15-oz. can of white beans (also known as cannellini beans). In a food processor, add beans, 2 Tb olive oil, 1 minced garlic clove, juice of 1 lemon, 2 chopped scallions, 1 tsp dried rosemary, 1 tsp dried oregano, ¼ tsp salt and ½ tsp black pepper. Serve with an additional drizzle of olive oil and fresh herbs for garnish (optional).
